
It looks like the weather is going to give us a break on Wednesday, we need the rain but just not on market days.
We still have summer crops available… home grown tomatoes – hybrid and heirloom, fresh corn and green beans! We’ll also have Swiss chard, okra, kale, cabbage, new potatoes, zucchini – golden and green, summer squash, egg plants, green peppers, candy onions, beets, cucumbers and cherry tomatoes. Kenny’s hot peppers are going to be available…jalapeños, banana peppers, pablano and a few hot mix variety. We will have some cantaloupes, a few peaches and “Black Imagination” seedless watermelons.
We have 1/2 bushels of tomatoes, green beans and beets if anyone needs some for canning please let us know and we will be glad to bring them to the market for you.
We will have some of our farm fresh eggs available, but they will be on a pre-order only basis on Wednesdays. It’s just too hot to keep unwanted eggs in the cooler. Just let me know if you need me to bring some for you and I will be glad to accommodate you.

Don’t forget to place your order for our “Baskets of the Week”, I need all orders by noon Friday. As the season progresses they just get better and better, this is a picture of last Saturday’s basket.

A little different salsa that is quick and easy to throw together as well as delicious. It’s a good way to use up some of those cucumbers that are so plentiful this time of year.
2 medium seedless cucumbers, peeled and diced
1 jalapeno pepper, seeded and diced
1 small red onion, diced
1 tablespoon minced garlic
2 medium tomatoes, diced
2 tablespoons lime juice
1 teaspoon minced fresh parsley
2 teaspoons minced fresh cilantro
1/2 teaspoon dried dill weed
1/2 teaspoon salt
In a medium bowl, stir together all of the ingredients. Cover and chill in the refrigerator for an hour or so. Serve with tortilla chips.

Agriculture Secretary Tom Vilsack has declared August 3 through 9, 2014, “National Farmers Market Week”. Throughout the week, USDA will celebrate our nation’s thousands of farmers markets, farmers who make them possible and the communities that host them.
The declaration was made via an official proclamation signed by Secretary Vilsack. This year marks the 15th Annual National Farmers Market Week recognizing the important role that farmers markets play in the agricultural and food economy. The U.S. Department of Agriculture began declaring National Farmers Market Week in 2000.
National Farmers Market Week is a great opportunity for you to visit your local farmers market and see all the tremendous services they provide. Farmers markets play a key role in developing local and regional food systems that support family farms, and help grow rural economies. They bring communities together, connecting cities with the farms that support them and provide Americans across the country with fresh, healthy food.
Thousands of farmers markets across the country offer consumers fresh, affordable, convenient, and healthful products sold directly from the farm. They also offer additional market opportunities for local producers, especially smaller or newer operations. Farmers markets increasingly offer electronic benefits transfer technology that can be used by recipients of USDA’s Supplemental Nutrition Assistance Program – as well as low-income women, infants, and children and seniors participating in the WIC and Senior Farmers’ Market Nutrition Programs – to get fresh, seasonal ingredients.

Just wanted to let all you folks know that we will not be at the New Albany Farmer’s Market this Wednesday, August 6th. Kenny and I will be attending the quarterly meeting of the Indiana Egg Board, hosted by the Purdue Extension Floyd County Office.
Attendees will learn about the mission and responsibility of the Board, as well as information on pertinent topics such as, farm market audits and refrigeration information related to a new directive from USDA/FSIS on the transportation and storage of eggs. Egg producers, suppliers and entrepreneurs are invited to attend this informative meeting.

A friend of mine shared this recipe with me a week or so ago, sounded delicious so I made some for Kenny this week. We think this is a keeper recipe, can’t wait to make these for the grandson’s next visit.
4 ounces BAKER’S unsweetened chocolate
¾ cup butter
2 cups sugar
3 eggs slightly beaten
1 teaspoon vanilla extract
1 ¼ cups flour
¼ cup cocoa powder
½ teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups shredded zucchini
½ cup chopped walnuts
Preheat the oven to 350 degrees.
Line a 13×9-inch baking pan with foil, making sure that the piece of foil is large enough to allow the ends of the foil to extend up and over the sides of the pan. Spray the foil with non-stick cooking spray.
In a large microwave-safe bowl, add the chocolate and butter and microwave on high for 2 minutes. Stir until the chocolate is completely melted.
Stir in the sugar.
Blend in the eggs and vanilla, stirring to combine as much as possible (there may be some egg that doesn’t completely mix in – that is perfectly fine).
Sift flour, cocoa powder, baking powder, baking soda and salt in a medium bowl.
Add flour mixture to wet and mix thoroughly. Then add the zucchini and walnuts and stir to evenly combine.
Pour the batter into the prepared pan. Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out with fudgy crumbs. (Do not over bake – these are very moist and fudgy brownies.)
Let cool completely.

A surprising and FABULOUS cake full of fresh squash! No one would ever know… especially the kiddos!
3 cups sugar
3 cups flour
1½ teaspoons cinnamon
1½ teaspoons baking powder
¼ teaspoon fresh grated nutmeg
1 teaspoon baking soda
½ teaspoon salt
3 cups finely chopped yellow squash (do not peel)
4 eggs
1½ cups vegetable oil
1 teaspoon vanilla
1 cup chopped pecans
1 cup raisins

4 cups confectioners’ sugar
1 (8 ounce) package cream cheese
1 cup unsalted butter, softened
Chopped pecans for decoration
In a large bowl, combine the sugar, flour, cinnamon, nutmeg, baking powder, baking soda and salt. Stir with a whisk.
In a medium bowl, combine the eggs, oil and vanilla. In a food processor, pulse approximately 4 to 5 yellow squash until they are evenly chopped. Add the squash and mix well.
Add the squash mixture to the dry ingredients and mix until combined, add nuts and raisins in the batter. This is a very thick batter, pour the batter into a well-greased 9″ X 13″ pan.
Bake at 350 degrees for 50 minutes to an hour or until a toothpick pierced into the middle of the cake comes out clean. When finished, allow the cake to rest in the pan for at least 10 minutes. You can either frost it in the pan or turn the cake out onto a large plate.
Allow the cream cheese and butter to soften thoroughly. Beat them together in an electric mixer. Add the confectioners’ sugar, one cup at a time until fully combined. Ice the top of the cake with the cream cheese frosting. Decorate the top of the cake with chopped pecans.
