This time of the summer we have so much zucchini, we could have it every night and still be over run with it. This is so quick and easy you can fix it tonight for dinner. We had ours with a piece of grilled chicken and a couple slices Kenny’s fresh tomatoes. Delicious!
3 eggs
1 cup grated Parmesan cheese
1/2 cup canola oil
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
3 cups sliced zucchini
1 cup biscuit/baking mix
1 small onion, chopped (or half of one of our “Candy” onions)
In a large bowl, whisk the first seven ingredients. Stir in the
zucchini, baking mix and onion. Pour into a greased 9-in. deep-dish
pie plate. Bake at 350° for 25-35 minutes or until lightly
browned.

We also have Swiss Chard, kale, cabbage, new potatoes, beets (a few more golden ones too), zucchini, golden zucchini, summer squash, green peppers, cucumbers, candy onions both red and white. Kenny has some fresh dug elephant garlic, along with some banana peppers and a few eggplant which are just beginning to produce.
We will have blueberries and black raspberries. We won’t have a lot so come early to get your pick.

It’s going to be another great day for the New Albany Farmer’s market. The market is open from 4-7, come down and see what’s in season. We’ll have blueberries and black raspberries to be picked tomorrow. We won’t have a lot so come early to get your pick.
We will have more “Candy” onions, Kenny’s fresh dug elephant garlic and vine ripened red Floyd County tomatoes. We will have plenty of squash… both golden and green zucchini as well as yellow summer squash. We’ll also have cabbage, Swiss chard, kale, green beans, new potatoes, beets, green peppers and cucumbers. We hope to have some corn available depending on it’s maturity…but for sure we will have plenty on Saturday.
Green beans and tomatoes are plentiful right now… if you need some for canning let me know and we will bring them on Wednesday for you.
We will have some of our farm fresh eggs available, but they will be on a pre-order only basis on Wednesdays. It’s just too hot to keep unwanted eggs in the cooler. Just let me know if you need me to bring some for you and I will be glad to accommodate you.

We have been quite productive around the homestead this week. We have been getting tomatoes for a couple of weeks and not selling all of them on Wednesdays so we decided to put them to use. Kenny and I made several batches of salsa, both our regular “Medium” as well as our “Chipotle Black bean and Corn”. As the tomato season progresses we will add additional items such as our homemade Spaghetti Sauce and Chili Base.
Sometimes when it rains it pours… strawberries were in with a vengeance the last couple of weeks so I made jam… my very popular Strawberry Balsamic, then something new… Strawberry Basil and last night I tried another old time recipe… Strawberry Gooseberry. Much to Kenny’s surprise he liked the new ones, especially the gooseberry.
In the mist of the strawberries ripening, the sour cherries decided to be ready too. I made Cherry jam, mostly because that is my all time favorite and we had a pretty good year for cherries. I managed to sell some to a couple customers and keep a few for ourselves, even managed to keep enough to make Kenny a cherry pie.
Now, today Kenny decided it was time to start picking blueberries. We picked a couple gallons today so I guess my Spiced Blueberry jam is gonna be made tonight! He tells me the black raspberries are just about ready to start picking! Green beans are being picked now, so make way for Dilly Beans, pickles are staring to come in so that means more “Hot & Spicy” pickles along with dill, bread -n- butter and new this year we are going to try a Spicy Bread & Butter. It looks like beets are ready for canning so Pickled Beets will also be available soon. I wonder why everything has to be ready at once… there is no time for sleep this time of year.
All of our homemade items are available via pre-order, and we manage to have some items out on the table at the market when space permits. But as the season progresses, table space is limited… and everyone wants fresh fruits and veggies! Be sure and ask if you don’t see jams or jellies because they are usually available.
Coming soon I hope to have a store front available on the website so you can see all the products we currently produce and have available. I’m just waiting on Gary, my son, to get all the details lined out. He’s the computer guru, I just fill in the blanks.

Last weeks’ Basket of the Week
It’s pretty much a repeat of last week… tomatoes! Kenny’s favorite time of year. We will even have more available this Saturday! It’s also “Candy” onion time, they are finally big enough to start pulling. Once we start, they like tomatoes just get better and better!
You won’t believe the size of Kenny’s elephant garlic this year… he just started digging them and they are awesome! Be sure and take one home with you Saturday!
Blueberries are coming in as well as black raspberries, we hope to have both for several weeks. Be sure to come early ’cause they are gone in no time.
We will also have at the market Saturday… English peas, beautiful beets, cucumbers, kale, Swiss chard, mustard greens, green onions, broccoli, cauliflower, cabbage, zucchini – green and golden, yellow squash, green beans and new potatoes.
We will continue our “Basket of the week” this weekend, if you are ready to get started please let me know by Friday morning. It takes lots of planning to make them happen, they are done fresh Saturday morning and are pre-orders only.

Elephant Garlic 2014
This gadget was introduce to me by one of our regular customers Debbie. She was going on about this cool “as seen on tv” gadget for making pasta out of zucchini. No carb pasta, imagine that! Debbie said I could find it at Meijer’s or anywhere that sold “as seen on tv” products. Well nothing doing I had to have one and see what all the fuss was about. You see, not thirty minutes after Debbie told me about it another regular customer started talking about the same thing. It must be something amazing and I was on a quest to fine one.
First thing Monday morning I headed to Meijer’s, low and behold on the “as seen on tv” isle there it was… a “VEGGETTI” -Spiral Vegetable Cutter, turn veggies into healthy spaghetti! I now am a proud owner of my very own “VEGGETTI”.
I have to say I was pretty impressed, it actually works just like advertised. I tried it out tonight and think it will be our new best gadget, after the ice cream scoop. I cut up two zucchini, sautéed in olive oil and garlic added a bit of Italian seasoning and topped with fresh parmesan cheese. Kenny liked his that way, I choose to add some fresh made pesto to mine (he really doesn’t like the green goop). Dinner in fifteen minutes, it took longer to heat up the oven to warm bread than to fix the “pasta”. Delicious!
It’s defiantly worth the $14.99. I can see using it for all sorts of things besides veggie spaghetti. It would make great stir-fry, salads, potatoes or garnishes. I can’t wait to use it again.

Well it’s finally that time of year again… the Wednesday afternoon market officially begins; it starts at 4 and be pack up at 7. We are finally official (although we have been there for the past two weeks) and have plenty of produce to bring both Wednesdays and Saturdays.
This Wednesday we will have more “Candy” onions, Kenny’s has fresh dug elephant garlic and vine ripened red Floyd County tomatoes. We will have plenty of squash… both golden and green zucchini as well as yellow summer squash. We’ll also have cabbage, Swiss chard, kale, green beans, new potatoes, beets, a few broccoli, fresh peas, and cucumbers.
Last day for strawberries will be Wednesday, we should have several gallons for sell. It’s almost black raspberry time… Saturday will be our first offering of them and we hope to have them around for several weeks. Blueberries should also be available beginning on Saturday.
The temps are rising and we have decided to stop growing lettuce and spinach until the fall. It’s hard to keep them from becoming bitter once the heat sets in; and even harder to keep them cool once we get to the market. The quality just begins to decline and we sure don’t want folks disappointed in their purchases. I will keep you posted when Kenny starts to plant again for fall. I do believe there are some vendors who are at the market that continue growing lettuce throughout the summer.
