Roatan, Honduras
I’m back… and what a vacation! The weather was gorgeous, everything was so luscious green and blooming; white sandy beaches, beautiful blue water, sunshine and warm breezes. No one could ask for anything better, I even managed to get a start on my summer tan!
This week we will be taking orders for the greens we have available… baby lettuce, spinach, and kale. Don’t forget to pick up your farm-fresh, free-range eggs at the market. We have quite the variety… brown, green and quail eggs too. Just a reminder that we have been selling out early each week so come early or pre-order to make sure you get the items you need.
Honey will also be available at the market this weekend. My friend Valerie Shealy’s local honey will be there, fresh from farms in Starlight and Floyds Knobs Indiana.
Thanks for supporting us with your purchases at the market,
Val & Kenny

Fresh Spinach
Things around the farm are about the same this week but I will be franticly trying to get produce washed and ready for this weeks’ market then get myself packed and ready for yet another adventure with mom. This time my Aunt Jo (she’s the one that helps us at the farmer’s market every year) is along for the fun… we are off and running Saturday immediately following the close of market, headed to New Orleans then cruising the Caribbean… Costa Maya, Belize, Roatan, Cozumel… sunshine and heat!
Back to reality… this week we will be taking orders for the greens we have available… baby lettuce, spinach, and kale. Hopefully in a couple of weeks we will have some more radishes available.
Don’t forget to pick up your farm-fresh, free-range eggs at the market. We have quite the variety… brown, green and quail eggs too. Just a reminder that we have been selling out early each week so come early or pre-order to make sure you get them.

- Strawberry Balsamic Jam
While rummaging through some old cookbooks this week I ran across several unusual jelly and jam recipes. I decided to try experimenting with some today and this is what I came up with. When mom and I were in Italy a few years ago I picked up this wonderful bottle of Balsamic Vinegar. This with our berries from last year made a terrific combination of flavors, Kenny and I really enjoyed it and think it’s a keeper. Note this is not a really “stiff” jam as that made with commercial pectin. If anyone is interested I will be bring some to the New Albany Farmer’s Market this weekend.
4 pounds strawberries, chopped
3 cups sugar
3/4 cup balsamic vinegar
Add the chopped strawberries, sugar, and balsamic vinegar to
a large pot. Simmer until strawberries are tender, about 20 minutes, stirring occasionally.
If you have an immersion blender, puree strawberries right in the pot until
slightly smooth but still slightly chunky. If you don’t have an immersion
blender, just use the old fashion method… a potato masher!
Bring the mixture to a gentle boil, and cook for 30 minutes,
allowing the mixture to thicken. Stir frequently to ensure the mixture doesn’t burn
on the bottom of the pot. The jam is done when there is a visible trace left
with your finger on a wooden spoon.

Seedling that Kenny transplanted last week.
We’re back and will be taking orders for the greens we have available… baby lettuce, spinach, and kale. Growing is slow but steady and Kenny has been gardening and transplanting every day. The seeding greenhouse is almost full and he just finished reconstructing the second high tunnel hoop-house. It will house the broccoli, cabbage and cauliflower for the spring market.
Don’t forget to pick up your farm-fresh, free-range eggs at the market. We have quite the variety… brown, green and quail eggs too. Just a reminder that we have been selling out early each week so come early or pre-order to make sure you get them.

Thanks Dodge for this awesome commercial. The Ram brand has declared 2013 the year of the farmer, and is kicking off a year of programs dedicating to highlighting the importance of farmers. I can’t watch this without tearing up, this was the best commercial of the Super Bowl. I know it’s a Dodge commercial, but it was so much more than that. I thank God every day for the hard working farmer he put in my life some 25 years ago.
Paul Harvey’s tribute to U.S. farmers, with his distinctive voice delivers the narration: his “So God Made a Farmer” speech, which he gave in 1978 at the National Future Farmers of America Convention. Follow this link to view the commercial one more time http://youtu.be/sillEgUHGC4
Note: The Budweiser commercial was terrific as well, they are usually my favorite.
We’re back and will be taking orders for the greens we have available… baby lettuce, spinach, and kale. We also have some Daikon radishes ready to harvest. Growing is slow but steady and Kenny has been planting something almost every day. He had a touch of the flu this past week but is feeling much better now.

This weekend begins our first week in 2013 at the New Albany Fire Department Headquarters on Spring Street. We will be there every other weekend thru April. Thanks again to Mayor Gahan for securing this location and to the New Albany Fire Department to graciously hosting, we are most appreciative. Several vendors have committed to being there for this session of the winter farmer’s market. We hope to see you there as well.

Spiced Blueberry Jam
Someone shared this with me sometime back and I never got around to making it until last night. I was a little skeptical due to the unusual ingredients but since they were all familiar and I had them readily available why not try it. I was truly amazed how wonderful it turned out, Kenny loved it as well.
6 cups fresh or frozen blueberries
One packet liquid pectin
1/4 teaspoon star anise, ground fine
10 to 20 grinds fresh nutmeg (or 1/4 teaspoon pre-ground)
2 tablespoons lemon juice
5 tablespoons (2 1/2 ounces) cider vinegar
3 cups sugar
1/2 cup water
Place blueberries in saucepan over medium-low heat. Add
liquid pectin followed by the anise, nutmeg, lemon juice and vinegar. Once
liquid starts to gather in bottom of pan, increase the heat to high and bring
to a boil. Lower heat slightly and boil gently for five minutes occasionally
mashing mixture. Mash in sugar, add the water and return to a boil for 1
minute. You just made jam.
Jar and process for 5 minutes.

We have had several inquiries about eggs this week… so I will be at the New Albany farmer’s market(under the pavilion) in the morning, Saturday, with fresh free range eggs. I have a couple of deliveries scheduled for tomorrow and I thought I would bring a few extra just in case someone needs them. I will also have spinach, kale and a little lettuce until I run out. No need to pre-order, just stop by between 10 -11. I will stay this weeks for an hour for your convenience.
Happy New Year!
Kenny & Val
Again we wanted to thank everyone for a wonderful season. It was a tough growing season but Kenny managed to produce another mighty crop and has already started his seed list for this year. He has had me ordering and will begin seeding this month.
We had such a beautiful snow this week and I took a few pictures and thought this one was pretty cool. It’s tomato cages, this is how he stores them for the winter, and I love how they look.
If any one is interested we will be at the New Albany Farmer’s Market under the pavilion again this weekend, Saturday the 5th from 10-11 with farm fresh eggs. If anyone need them drop by and pick up a dozen or two.
Have a safe and happy new year!
